Does someone know where I could find a description of this judging apparatus, with a map of the components ?

You gave a very vague question. What brand and which machine? Even knowing that, you may not get an answer. Most machines have proprietary circuitry and do not give out that information. Can you be more specific?

As most machines have proprietary circuitry, I think it is hard to know how they are made.
