Don't the properties of the Underarmour (and other wicking fabrics) mean that the moisture travels outward and soaks the jacket quickly? Would that cause a problem?
Nope. That is, as long as you wash your kit from time to time..

Compared to what? If you sweat X amount, there can only be X amount of moisture between you and your jacket, regardless of what fabric (or lack thereof) is between you. The gear is going to get sweaty no matter what you do.
