Array one time i faced a newbie club fencer who reminded me of a back alley yakuza knife fighter. I was very very confused. I won 1-0 on attack no counterattack.
Something about winding up and swiping makes parry easy, but riposte incredibly difficult. Everyone relax cause I got it.... -

Also, a little bit because you never know when they're going to go do something stupid that gets you hurt. In one bout with a club fencer, he both broke the guard on my saber and put a terminal dent in the blade. That's really more than I'd like to pay for an easy 5-0 victory.
As for the why novice club vs novice varsity, I don't think I ever encountered any varsity fencers who were quite as bad as a lot of the club fencers I had to face (excluding Yeshiva), but I didn't like fencing bad varsity fencers either. Similar Threads -
