    Lemon cake

    This is my 1000 post!

    to celebrate (and because I'm really hungry) I'm giving rep to every one who post a recipe for something made with lemons or lemon juice.

    Lemon Bars!

    INGREDIENTS:
    2 sticks (8 ounces) butter
    2 cups flour
    1/2 cup confectioners' sugar
    4 beaten eggs
    2 cups sugar
    4 tablespoons flour
    1/4 cup lemon juice
    1 tablespoon finely grated lemon peel
    sifted confectioners' sugar
    PREPARATION:
    Heat oven to 325°. Blend butter, 2 cups flour and 1/2 cup confectioners' sugar. Pat into ungreased 13x9x2-inch pan. Bake for 18 to 20 minutes. For filling, blend together eggs, sugar, 4 tablespoons flour, lemon juice, and lemon peel.
    Pour over first layer. Return to oven and bake at 325° for 20 minutes. Loosen around edges, cut into bars and sift confectioners' sugar over the top while warm.


    Mmm tasty.

    Chocolate Lemon Tart

    1 1/4 cups superfine sugar
    6 egges
    grated rind of 2 lemons
    lemon juice
    generous 2/3 cup whipping cream
    chocolate curls, to decorate

    pastry:
    generous 1 1/2 cups all-purpose flour
    2 tablespoons cocoa
    4 tablespoons confectioner's sugar
    1/2 teaspoons salt
    1/2 cup butter or margarine
    1 tablespoon water



    Dir:
    1. Grease a 10-inch pie dish. For the pastry, sift the flour, cocoa, confectioner's sugar and salt into a bowl. Set aside.

    2. Melt the butter or margarine and water over low heat. Pour over the flour mixture and stir until the dough is smooth.

    3. Press the dough evenly over the base and sides of the dish. Chill while preparing the filling.

    4. Preheat a baking sheet in the oven at 375*F. Whisk the sugar and eggs until the sugar is dissolved. Add the lemon rind and juice and mix well. Add the cream.

    5. Pour the filling into the pastry case and bake on the hot baking sheet until the filling is set, 20-25 minutes. Cool on a wire rack, then decorate with chocolate curls.

    Lemon Drop:
    1 1/2 shot Absolut Vodka
    1 1/2 shot Cointreau
    Juice of 1 wedge Lemon

    Shake vodka, Cointreau and juice of a lemon wedge well with plenty of ice. Strain into a sugar rimmed cocktail glass. Garnish with lemon zest.
    A synonym is a word you use when you can't spell the word you first thought of.

    Blue Drop (variation of lemon drop), a la Excelsior Hotel Boston

    3 parts top-shelf citron vodka (belvedere, ketel one, grey goose)
    1 part blue curacao
    2 parts lemon juice
    2 parts limoncello

    Shake with ice and serve.

    Mmmmmmmm.

    Lemon Marmalade

    Ingredients
    10 large lemons
    4 cups water
    4 cups sugar

    Instructions
    Using vegetable peeler, remove yellow part of peel in strips from lemons. Cut strips into 1-by 1/8-inch strips. With knife, cut off all white membrane, or pith, from peeled lemons.

    Cut peeled lemons crosswise into 1/4- inch-thick slices. In heavy nonaluminum 5-quart kettle or Dutch oven, combine lemon peel, sliced fruit, and water. Cover and refrigerate 3 to 4 hours.

    Heat lemon mixture to boiling over high heat, stirring frequently.

    Reduce heat to low; cover and simmer, stirring occasionally, until lemon mixture is very soft, about 1 hour.

    Add sugar to lemon mixture and increase heat to medium-high; stir until sugar dissolves. Heat to boiling and reduce heat just so mixture boils gently. Boil uncovered, stirring frequently, until candy thermometer registers 220 degrees F., 45 to 60 minutes.

    Meanwhile, prepare three 1-pint canning jars with their lids and bands for processing following manufacturer's directions.

    Spoon marmalade into hot jars, leaving 1/4-inch space at top ofjars.

    Wipe jar rims clean. Seal with lids and bands. Process jars in boiling-water bath 15 minutes. Cool jars on wire rack. Label jars; store in cool, dry place.

    Yield: 3 pints

    im suprised now1 has added the best pie ever!

    Lemon Meringue Pie!!!!!!!!!!!!

    Pastry
    1 1/3 cup all purpose flour
    1 pinch salt
    1/4 cup cold unsalted butter
    1/3 cup cold vegetable shortening
    5 tbsp ice water

    Lemon Curd
    2 cup water
    1/2 cup cornstarch, plus 2 tbsp.
    10 egg, yolks
    1 cup lemon, juice
    1 1/3 cup sugar
    1/8 tsp salt
    grated zest of 4 lemon

    Meringue
    4 egg, whites
    1/2 tsp cream of tartar
    1/2 cup sugar
    1/2 tsp lemon, juice

    Directions:

    Pastry
    Preheat the oven to 375 degrees F.
    Sift the dry ingredients together.
    With a pastry cutter, blend in the butter and shortening until the mixture resembles coarse crumbs.
    Add the ice water gradually until dough forms.
    Pat the dough into a flat disk and refrigerate for at least an hour.
    Roll the dough into a 13-inch round. Place it into a 9-inch pie plate and crimp the edges in a decorative pattern.
    Pierce the bottom with a fork.
    Place a piece of parchment or tinfoil in the shell. Fill the shell with pie weights.
    Bake for 20 minutes.
    Remove the pie weights and paper and continue to bake about 15 minutes until the pastry is golden and set. Cool on a wire rack.

    Lemon Curd
    In a small bowl, whisk the cornstarch with 1 cup of water until dissolved. Set aside.
    In a small saucepan add egg yolks, lemon juice, sugar, lemon zest and salt and the remaining 1 cup of water.
    Cook over medium low heat for one minute, stirring constantly. The mixture should not boil but the sugar should dissolve.
    When the sugar has dissolved pour in the cornstarch mixture and turn up the heat to medium.
    Cook mixture, stirring continuously with a spoon so that the mixture does not stick to the bottom or the sides of the pan.
    Cook for 6 to 8 minutes until it has started to boil, thickens and becomes translucent.
    Set filling aside to cool slightly.
    Immediately make meringue so filling stays warm.

    Meringue
    Whip egg whites on high speed.
    Immediately add cream of tartar and whip until soft peaks form.
    While whipping, add the sugar one tablespoon at a time to allow it to dissolve.
    Add the lemon juice at the end when the meringue is shiny and holds medium stiff peaks.
    Assembly
    Pour the warm filling into the cooled pie shell and spread the meringue on top, making sure to reach the edges of the pastry.
    Use your spatula to swirl the meringue into peaks.
    Cook the pie at 375 degrees F. for about 6 minutes until meringue is just golden.



    not that easy to make but the effort is worth it

    Lemon + Lime + soda = Sprite, in theory.

    2) Slice a lemon,
    3) Squeeze some juice in the water and drop the lemon slice in.
    4) Sit back on your deck chair with you big floppy hat on.
    5) Spend the day wolf whistling at the guys walking by.
    *Works well with rum as well.

    Lemon chicken with garlic and butter.
    INGREDIENTS:
    4 to 5 pounds chicken parts
    2 tablespoons grated lemon peel
    1/2 cup lemon juice
    2 cloves garlic, crushed
    2 teaspoons dried thyme
    1 1/2 teaspoons salt
    1 teaspoon black pepper
    1/4 cup melted butter
    2 lemons, thinly sliced
    1/2 cup chopped fresh parsley
    PREPARATION:
    Wash chicken parts and pat dry. Arrange the chicken in single layer in a large shallow dish.
    In a small bowl, whisk together lemon peel, lemon juice, garlic, dried thyme, salt, and pepper. Spoon lemon mixture over chicken; refrigerate for 3 to 4 hours, turning several times to coat well.

    Remove chicken from marinade and drain well, reserving marinade. Arrange chicken in a 2-quart shallow baking dish. Brush with melted butter. Bake at 425° for 25 minutes. Brush some of the reserved marinade on the chicken and bake for about 30 minutes longer, basting several times. Chicken should be browned and cooked through.

    Garnish chicken with lemon slices and sprinkle with chopped parsley. Boil remaining marinade for 1 minute and spoon a little over the chicken just before serving, or serve separately. Serve with hot cooked rice or noodles.

    Lemon chicken recipe serves 8.
