Every singly one you listed there uses 2 of the things you use as a definition, and it only takes one by that definition. They use just as much as any racing competition, in the assets of agility and skill, and even to an extent stamina. The only stamina NASCAR drivers require is the ability to resist being bored.

As you said, they are not a sport. Don't hold a double standard.

They lack the athleticism aspect.
I incorporated a rough definition of athleticism into my definition of sport, to try to save ambiguities.

To make it easier: Does the activity make you work, (i.e. sweat, straing, exert yourself physically as well as mentally)?

Driving a race care is very strenuous. Forget about endless left turns and trying to stay awaek, and think instead about how they have to hit every turn perfect, and be in complete control of all their faculties the whole time, constantly adapting to changing conditions and the actions of others. It's not just sitting back and pushing down the pedal with the radio blaring.
Hence it qualifies as a sport
The others I listed ()aside from possible golf, as I mentioned) really don't do much in terms of physical exertion.
(btw: By "fishing" I mean the light-duty stuff, like angling for trout, etc. FIshing for the big beasties that fight back hard is another level of fishing altogether.)

I concur with Zilverzmurfen, poker is not a sport. My favorite was, on the championships they took a poll on whether it was a sport or not. One response summed it up: "I'm pretty sure if you can drink a beer at the same time as 'playing your sport', it's not a sport".

Not only do they televise poker, they actually introduce the programs as "A special sports presentation". Ugh.

I will watch golf on a weekend while I am getting ready to go out, because I do not get cable and there is usually nothing else on besides bad cartoons and infomercials...or other sports, like basketball, baseball or auto racing, to which I am really averse. If nothing else, the golf presents me with the spectacle of soothing expanses of greenery and bodies of water, things which my chosen abode does not exactly offer in great abundance. Similarly, I will watch women's tennis, though only when certain players are in evidence, ahem.

I concur that soccer is insufferable. But then, there are very few sports I can watch with any interest. Boxing, I guess. Gymnastics in small doses. Other than that, feh.

Worse, I distinctly remember Mike D'Asaro Jr. doing it during the Gala Night fencing at Duel in the Desert. Does that mean fencing isn't a sport?

Can we reconsider that criterion?
