Ukrainian starfish each perogies, but I suspect he mentions it only because it makes me jealous. He has a short drive to my favourite Ukrainian restaurant, while it would take me three days.

I'm also a big fan of potato and onion, and the potato and garlic ones are good, too (although you don't want to be entertaining too many people if you have those).

My Czech grandma and my mother make by hand the traditional potato and then a lekvire(an apple/prune mix) that was for dessert. On top of the potato one they would make a melted butter and sauteed onion sauce that would make them so heart-cloggingly delicous.
