I think that's just a function of people's tendency to slur some words. Or in this case, to flatten out the initial E.

Instead of all these words for sabre fencers, I propose "Excellencies". That strikes almost the right chord of awed respect which we ought to be accorded.

No, no, you say épée for epee!

More seriously, the first é and the second one are pronounced the same way but I can't find out an english word which has this sound in it, sorry. (... and don't say Rendez-vous, folks!)

I pronounce the first "e" in "epee" like the flat "e" in "let."

I pronounce the final "ee" like the long "a" in "hay."

I think that sabreurs have been more concerned about how the actions are called than how they themselves are called

Besides, in our little corner of world, we usually denominate our glorious activity of sabre simply by the name of "fencing". Occasionally we might "do some foil" or "poke with epees" for the fun of diversity, though...
