    Clearly, your husband was a cradle robber.

    I think I am one day early,but I will be in airports or planes all day tomorrow. Plus....I just like being first.

    Elk is some of the loveliest meat. It's one of my favourites. It tastes slightly sweeter than organic beef or bison. It is closest to deer.

    Overall, elk, venison, bison, moose, organic beef all taste similar to each other if they are grain-fed, as they are all related. How do you know what they ate? Grain-fed come from flat prairies, where there a few trees. If they are "raised" or from a ranch, they are grain-fed... and yes, there is ranch-raised elk (I buy mine from Central Alberta).

    Wild animals that live in habitat with lots of trees and very little grasses will taste more "gamey". Gamey are nasty strong pieces I feed to my dog (dogs love these parts the best).

    Gamey pieces are little surprises hidden in the meat, from one bite to another you never know where you're going to hit one. The fatty areas are the gamest, however wild meat has very little fat or marbling, so it's sometimes tough to tell. You need to cook all these meats with some water in the roasting pot or it will come out dry.

    "Places I Love" is just beautiful. I want to go to that lake were you catch Rainbow Trout on each cast and I have never seen wild horses either.

    You had already inspired me to add pictures of my own, though now I see I need to "professional it up" a bit and organize better.

    Once again...I enjoyed the photos. I have Canada envy.
